This talk sounds very interesting and I regret that I cannot be in
Regina that day. It's my dream that someone in Saskatchewan would
make artisinal cheese. I was recently at a conference of the
National Farmers Union, in a discussion about milk quotas, and
someone asked the question: "If I wanted to milk one cow and sell
the cheese, how much would it cost to buy a quota?" The answer: $21,
000. That's NOT for the cow, but for the licence to milk the cow!
I'm sure they don't have that 'problem' in France. Amy

The Institut français and the Assemblée communautaire
fransaskoise (ACF) invite you to a conference on rural
development, to be held on Thursday, January 11, at 7:30
p.m., in the Rotunda of the Institut français. André
Valadier, President of a cheese co-operative in the Aubrac
territory in France, will share his vision for revitalizing
rural economy in the face of globalization. The conference
is open to the general public and simultaneous
interpretation services will be available from French to
English.
André Valadier is not only an active player in his
community, but is also a seasoned entrepreneur, rancher and
farmer. A man of deep conviction, he persuaded the
ranchers of Aubrac to renew the production of Laguiole
cheese in the sixties, creating the Jeune Montagne cheese
co-operative. Annual production rose from 25 tonnes in the
1950s to 700 tonnes in the year 2000. André Valadier will
explain how a particular food product can help revitalize
rural areas, giving them a new economic reality and
international recognition.
